Diabetes is a medical condition that interferes with a person’s ability to process sugar. Thus, diabetics must carefully monitor their sugar intake. This article will focus on three diabetic cake recipes made with alternative sugars.


For people who love chocolate, it can be difficult to give it up, even if diabetic. This chocolate cake recipe has enough chocolate to feed your sweet tooth, but it is made with a sugar substitute. Diabetic cake recipes make a perfect gift for people with diabetes.


3 tablespoons butter

1/4 cup veggie oil

3/4 cup sugar substitute

1 teaspoon vanilla

2 eggs

1 and 1/4 cup of whole wheat flour

1/3 cup unsweetened cocoa

1/4 teaspoon salt

1 and 1/2 teaspoon baking powder

non-stick cooking spray

3/4 cup milk

Other things you will need:

A hand mixer

A large mixing bowl

A metal cake pan


Begin by using a hand mixer to blend the three tablespoons of butter together with the 1/4 cup of veggie oil. Mix for about 30 seconds or until ingredients are smoothed out.

Then, slowly add the sugar into the mix by mixing in about 1/4 cup of the sugar at a time. After you add each bit of sugar, beat for about thirty seconds. Once you have added in all of the sugar substitute, beat the ingredients together for approximately two minutes. Add in a teaspoon of vanilla and the two eggs. Beat for another two minutes.

Next, in a separate mixing bowl, you will mix together your dry ingredients. First, put your 1 1/4 cup of whole wheat flour into the bowl. Add the 1/3 cup of unsweetened cocoa, the 1/4 teaspoon of salt, and the 1 and 1/2 teaspoons of baking powder.

Mix the dry ingredients all together in the bowl and then slowly add it to your butter and egg mixture. Be sure to add this slowly into the mix, adding only about a 1/4 cup of dry mixture at a time. Blend for 30 seconds each time you add another portion of the dry mix.

Finally, you are ready to add the 3/4 cup of milk to the mixture. Blend for another two minutes. Pour the batter into a metal pan. Bake at 350 Fahrenheit for about 30-35 minutes. Check the cake after the first thirty minutes by sticking a toothpick in. If the toothpick can be removed cleanly, the cake is done.

Some diabetics will add sugar-free frosting to their cake. Others may want to enjoy the taste of chocolate with no added icing.

POUND cake

This next diabetic cake is easy to make and contains few ingredients. The cake will have a soft hint of vanilla flavoring. However, some diabetics may opt to leave out the vanilla extract or perhaps replace it with almond or another flavoring.


3 eggs

1/2 cup butter, unsalted

1 1/2 cups all purpose flour

1/4 teaspoon of salt

1 teaspoon baking powder

3/4 cup sugar substitute

1 teaspoon vanilla extract (optional)

Other things you will need:

A hand mixer or electric mixer

A large mixing bowl

A metal cake pan


Begin by putting the 1/2 cup butter into a large mixing bowl. Add in 3/4 cups of sugar-free sugar. Use a hand mixer to blend the sugar substitute with the butter. Once the mixture is smooth, add the eggs one at a time. Beat the mixture for about one minute after each egg. Next, add in the 1 teaspoon of vanilla extract. Beat for one minute.

Then, you will add in your dry ingredients. Add the 1/4 teaspoon salt, the 1 teaspoon of baking powder, the 1 and 1/2 cups of all-purpose flour. Once these dry ingredients have been added to the butter and sugar substitute, use a spoon or spatula to mix the dry powder in. Then use the hand mixture for about one minute to thoroughly mix all ingredients together. Make sure the batter is smooth and lump-free.

Next, add the batter to a metal loaf pan. Bake the cake at 350 Fahrenheit for about 30-35 minutes. Insert a toothpick after 30 minutes to test if the cake is done.


The third of our diabetic cake recipes is for a sugar-free carrot cake. Like the pound cake, this carrot cake is easy to make, though the carrot cake includes more ingredients.


3 cups whole wheat flour

2 cups grated carrots

6 egg whites

1 cup unsweetened applesauce

1 cup milk

1 cup sugar-free brown sugar (choose your favorite brand)

1/2 cup raisins (optional)

1/4 cup chopped walnuts (optional)

2 tablespoons ground cinnamon

1 and 1/2 teaspoon vanilla extra

1 teaspoon ground nutmeg

2 teaspoons of baking soda

2 and 1/2 teaspoons of baking powder

Cooking spray

Other things you will need:

A hand mixer

1 large bowl

A fork

A glass baking dish


Begin with your large mixing bowl. Add egg whites to the bowl and beat them with the mixer on a low setting. Beat for about thirty seconds. Add in brown sugar and beat again. Next, add in unsweet applesauce, the milk, and the vanilla extra. Beat until all are well-mixed.

You will use your fork to add in the last ingredients. Begin by stirring in the nutmeg, the cinnamon, baking powder and baking soda. Mix it all together with your fork. Slowly stir in the flour. Add in the carrots. Finally, stir in the raisins and walnuts. These last two items are optional, and you may substitute pecans, almonds or any other nut for the walnuts. Use your fork to stir the mixture for another 1-2 minutes. The mixture will be lumpy rather than smooth.

Spray a glass 9×13-inch baking dish. Add the mixture to the dish. Bake on 350 Fahrenheit for approximately 35-40 minutes. Test the cake after 35 minutes using the toothpick method.
